My son liked to open all the bags and dump them in a big pile on the floor too. Then he went looking for pieces or asked me to go looking for the pieces when we build together. He had eagle eyes. I'd be trying to find the piece for him and he would say dad it's under your nose and grab it under my nose. Some kids got it and some adults don't. Maybe suggest she try opening the bags into individual piles for each bag. Number the piles if the bags are numbered too. It is not quite maniac sorting, but cut down the mountain to search in smaller hills. -
You could theoretically use your sliced bread sandwiches to pad your build to take to the event and then eat the padding. You can't eat bubble pack though. Good way to make friends at an event when you have food to share.

You aren't reselling the instructions for the MOC but you are selling those bricks purchased for the MOC. I don't think there is a conflict since those bricks are your property. You're basically providing a value add service of doing the hard work of finding those bricks on Bricklink so someone else doesn't have to do it. If instructions can be considered like a how-to book you can buy at the book store. In which case, it could be resold like a used book. On the hand, if the copyright holder of MOC design only licensed the use of the MOC instructions to you, then it may not be resold if that is in the licensing agreement.

Another way to look at it is time sorting is time not building. -
There is a new cargo train set coming out later this year. The red diesel locomotive will be European style versus North American for the current blue cargo train set. You can look at brickset.com for pictures of train sets and see which ones appeal to you.

You could use half thick Technic lift arm beams for centering the boogies. Mount them between plates used to make the base.

The current 60052 cargo train may be good for that. It has a "depot" with gantry crane and forklift to load and unload stuff. You can modify the cars to carry other types of supply besides the cow. I think it is good starting point to build upon.

Are you looking for a particular color scheme to match the Artic orange sets? The easiest is to get the current 60052 cargo train set since it is readily available and you're not paying the premium for discontinued sets. Ther eis another cargo train supposedly coming out this year too.

I transport my delicate builds in boxes. I use 2x4 and 2x6 pieces to brace the build them inside the box. For my stronger builds like GBCs, I just toss them in a large plastic bin. Some of my LUG members use bubble pack and it seems to work too.

Sell it as a 8043 since people may be more interested in the original than the MOD. And sell the parts for the MOD separately for someone else who wants to MOD their 8043. Maybe you should check with LEGO too before selling it since you used their building instructions. -

Perhaps have separate catergories for digital and non-digital builds. Have different judging and points criterias. -
The IKEA tray may be not big enough for the very large sets that don't come with numbered bags. I think for sets with numbered bags, it'll work. I normally use the pile method for the large pieces and the small bowls for the small pieces.

I've used the PDFs when rebuilding sets that I parted for making a MOC. It's faster than digging out the printed manuals from storage. I guess if you have built the sets before from following the printed instructions, it is not hard to remember what the parts are and where they go looking at the low-res PDFs.

Nice Shell color containers. Some rear windows would make life easier for the drivers so that they don't have to stick their heads out the door windows to see when running the engine other direction.

Sometimes you may have to roll the batteries in the holders a bit to get good contact. The recessed positive terminals can be problematic.
