There's always a chance of a reproduction, but I wouldn't count on it when it comes to the 8043 and 8258. The 8043 does have a lot of commonly available parts. You will be able to build it without making a huge investment. Some goes (more or less) for the 8258. I would use Rebrickable to check which parts you miss and order them via Bricklink.

Hi Burf, Great demo! Can you explain your setup a bit more? I reckon the Apple watch communicates with an App running on your iPhone and your iPhone is connected to the EV3 unit? Will you be making another demo, using the Apple Watch's Gyro Sensor?
