why does lego lord voldemort have a nose?

Just as real Voldemort has no nose while everybody have one, The minifig Voldemort has a nose while every minifigure don't have one. Simple.

Because characters with unusual non-human faces often  get those details printed on, even when they violate the Lego aesthetic. Cornelius Evazan from Star Wars would probably also get a nose.

Also of note, not all Voldemorts do have nostrils. The Lego Dimensions version does not, and luckily he looks fine, so you can buy one of him if you want a nose-less one:

but Cornelius Evazan have a nose so violating the Lego aesthetic will make it more true to the source, but in the case of Lord Voldemort giving him a nose will both violate Lego aesthetic and the source material, it's not really a bad look tho and as Eggyslav said

With a few exceptions, “human” minifigures do not have printed noses—because it should just be assumed that they have noses.

Likewise minifigures don’t have printed ears, but many hair pieces are molded so as to give the impression that they have ears.

Just because something is not focused on, does not mean it doesn't exist.

For Voldemort (and a few other characters such as Mummies and Skeletons), Lego prints holes or slits to emphasize the lack of human features which we would normally just assume to be present. So putting slits on Voldemort’s face is meant to make it off putting and inhuman in comparison to typical minifigures.
