Did we ever determine which Patronuses will be included in the new sets? I think we know Harry’s stag will be in the Expecto Patronum set and Ron’s dog in the Knockturn Alley set (based on the sketches). Was there any word on what might be included in the East Wing or any other sets?

Nothing was shown in the East Wing leak, but since it was clearly an incomplete sketch we can probably still expect one there. 
 

The East Wing is almost certainly going to be Ginny’s Horse based on the other present characters not having patronus forms + the golden trio’s already being accounted for. 

76478 is a big mystery, but given that Snape’s famous Doe hasn’t shown up yet it seems highly likely that it will show up there.

It’s not impossible that the Hogwarts Herbology Plants and Norbert: Hagrid’s Baby Dragon sets could include something like the Cauldron: Secret Potions Class included Hermione’s Otter, but it seems more likely that they’ll skip the gimmick like the large Ford Anglia set did. 
 

When the 20th anniversary did the golden minifigures gimmick, Lego included three in the Icons D2C, so people have also been speculating that this year’s Ministry of Magic D2C will have some patronuses. The strongest contender there is Dumbledore’s Phoenix, both because his duel with Voldemort would be a central part of an OotP Ministry, and because the new flying Fawkes mold seemingly introduced in the East Wing set is practically begging to pull double duty as Dumbledore’s patronus. If history repeats itself and more than one patronus turns up in the D2C, other candidates would be Kingsley’s Lynx, Arthur’s Weasel, and Tonks’s Wolf (with an outside chance of Umbridge’s Cat

 Yeah, no. We've already gotten McGonagall's cat in a EUR 15 set and the entire point of this gimmick is to force people to collect 'em all.

The D2C is almost certainly coming with Dumbledore’s Phoenix if it participates in the patronus gimmick. Potential patronus doubles in Umbridge or Tonks would only appear if Lego decided to give the Ministry D2C a trio of patronuses like the 20th anniversary Hogwarts Icons had golden minifigures. 
 

That said, if we did get a double as the third patronus in that situation, I’d expect it to belong to Tonks. Umbridge doesn’t appear in the OotP final battle (not even to witness the end, like Fudge) and I feel like it makes more sense to prioritize including minifigures of Ministry workers who are also Order members who can run to the kids’ rescue in the DoM. As far as patronuses goes, that means Kingsley, Arthur, and Tonks, and since the former two would both be new molds, Lego could easily chose to save on costs with a double in the hypothetical third slot.

Lego won't include duplicate collectible patronuses and both Tonk's and Umbridge's are already done. If they want multiple in the set, Arthur's weasel would be a possibility.

I think they stick with just 1 for that reason. Either form of Fawkes would work for Dumbledore and be desirable.

I can definitely see it just being Dumbledore’s Phoenix, and that would still be very popular. But the trio of golden figs in the Hogwarts Icons set does given me hope that we could possibly get the ideal scenario of Dumbledore’s Phoenix and Kingsley’s Lynx and Arthur’s Weasel. And if two new animal molds is too expensive, I can’t see a trio of Phoenix, Lynx, and second Wolf (or Hare/Jackrabbit) deterring any potential buyers (especially if it means getting Tonks in her Ministry battle outfit).
