Reshaping Indiana Jones' hat so the trim is shorter b.) Temporarily sticking the hat to a hair piece where it could come off easily but not all the time LEGO already make a 'fedora' style hat which is essentially a shorter rimmed cow boy hat, you might want to check that out before cutting up a perfectly good head gear ;). Without damaging the hair the only thing I can think of is blue Tac, or if your DIY skills are pretty sharp, you could always embed a magnet into the head (covered by the hair) and then one on to the underside of the hat.
