To begin with I have two questions about alternative brands, because I know basically nothing. I followed only lego so far.

1. Where I can find the online catalogues for them, so something like bricklink or Brickset for other brands?

2. Which brand has the values most similar to what lego used to have? So no military, no modern weapons, no foreign IP, family friendly, encouraging creativity, alternative builds, possibly also "blocky" designs, so open studs (or other connecting points), abstract shapes etc.

If you are looking for blocky designs aimed at children maybe Kiddicraft is for you. (Though due to the newest EU regulations they ship only withing Germany at the moment until the issue is resolved.)
