Because the pic you had of the red interior is specifically for British cars. It would look too out of place in a Nissan.

I use them as walls since I don't have that many 1X* bricks, and they are good for making roofs since I don't have a lot of slope bricks.

These new pics are really cool. The only thing I don't like are the colours of the Slave I and the random white plates on Palpy's Shuttle.

You could paint the dash. Instead of painting the whole thing, you should just paint parts of it so it doesn't look too wacky.

I don't understand what you mean by colour changes, but UCS is essentially a big model with lots of detail on it regarding the original vehicle from the SW series. For reference you could go onto Brickshelf and search UCS or go onto Wookieepedia and look for vehicles to biuld.
