I've searched around and come up with nothing, so would anyone be able to tell me when LEGO stores generally replace their stock? This is for both new sets and PaB walls. Thanks!

umm, just call the store to find out. from what i can gather it is usually monday or wednesday. i would call on a weekend (saturday, mostly) and they would reply "no stock...call again on monday." or sometimes on wednesday which leads me to believe that's when the shipment comes in.

Well I was trying to find out if there's a set date for these things, as I'm planning a visit for a Lego store an hour away.

That's a good question but I have a question as well. What type of pieces are on the PaB wall? Are there minifigs and are there food pieces?

No, they're just bricks. There was a MF PaB awhile ago but that program stopped

I've never seen food. They had a very limited minifig PaB program, that seems to have stopped. Sometimes they'll have some specialized pieces (i.e. chairs, steering wheels, trees, plant stems, etc.). Last time I was at one in San Francisco, they had a bin full of brown dogs, which was surprising.

I have seen many variations of PaB selections, other than the random basic bricks in random colors (I used to always raid the purple!) I have seen food on the walls before (Only ice cream stacks - great for smoke effects) However there always seems to be a slight variation of what is included. Check it out ;-)
