Which star wars sets have the most gimmicks and posabity, or are just fun to interact with?

What is considered to be the "best" sets by collectors? Looking to spend $40 to $70....i like villains more than heroes. Im a beginner collector, so far ive only bought tie advanced, and grievous wheelbike.
