This is my very own Death Star Conference Room MOC built of LEGO bricks:

Minifig scale! - Seats for up to 8 minifigures - Death Star Conference Room features two functual, smoothly sliding doors, 8 seats for minifigures that can be turned, a large round conference table where you can put a Palpatine-hologram on top, and surrounding wall details with many references to the movie Star Wars: A New Hope.

Agreed on that.  I have thought about possible future sets in a modular format for the Death Star, Hoth, Bespin and Endor much like is being done here.  Of course, official Lego sets would never have so much detail due to the retail cost, but we can dream.
