It's possible. You'd just have to have the balls hitting the keys, and not xylophone bits.

Might be difficult to replicate the 'sound' aspects with Lego. There is one reason musical instruments use either metal or air. Metal tends to have high frequencies and low damping, plastic does not. So, yes even if we can replicate the mechanisms with Lego, I bet the sound will NOT be that good.

could several EV3's be used, and have the sounds be played from those, say a ball hits a touch sensor.

You can have the marbles roll past a EV3 light sensor and trigger the sound that way. Dropping on a touch sensor might damage it over time. You can see the paint chips and impressions on the xylophone bars.
