Well, depending on the size of the MOC, and the shape of the particular ship, there are a few techniques that could work.

Inverse slopes could be stacked in side-by-side "layers" to create the shaping, as in the front of the Maersk ship. A similar technique could be done using basic bricks/plates, but will look blockier so I don't recommend it unless the ship will be REALLY big, in which case it would appear more curved.

A slightly more advanced technique would involve using clips (Parts like this and this) to connect plates and tiles at an angle to each other. This will require more knowledge of SNOT (Studs not on top) techniques than the previous method, particularly when attaching it to the rest of the ship. I can post an LDD picture of this if you need examples. A good example of this is here (I'm not certain if the build used clips rather than another part type since they aren't visible, but that shows the general result).
