My favourites are:

For me the best sets are those that at least try to look in scale with minifigs (MF, AT-AT) or dont include minifigs at all (1st death star,UCS destroyer). Second death star or Tantive IV are great sets, but are too out of scale and have too many "play features" to really look as "collectors" sets.

So:

1. UCS Millenium Falcon (you just cant beat its size and part count)

2. UCS Star destroyer (very realistic looks)

3. 1-st death star (same)
