I'm coming out of a second dark age, and I'm looking to try an 8-wide Speed Champions set for the first time.  I'm not a gearhead and know nothing about cars, but the 8-wide Speed Champions sets are intriguing to me because of the unique building techniques and amazing level of detail.  (Shoutout to RacingBrick's incredible reviews!)

Strictly from the standpoint of building experience and building techniques, which is the best 8-wide Speed Champions set?  If you restrict yourself to single car sets, which is the best?  (Again, it won't bother me a bit if the model doesn't look "enough" like the real car because I won't know the difference.)

That's hard to say for me, as one of the things I like about them, is how each one does the build a little bit different, I enjoy each build and they are inexpensive enough that I can afford them all.

I’ve got all the 8-wides and, for me, the one that put the biggest smile on my face was 76896 Nissan GTR Nismo.  
And that’s coming from someone who generally feels fairly ambivalent to modern Japanese cars.
The Quattro got me into the range but the Nismo put a huge smile on my face as I was building it and I still think it has the cleverest design from those early 8-wide models. 
Not sure how much they are fetching new these days though.

The 1970 Ferrari 512. I too just started on the SC range and have bought 9 or so models in the last half year - and the Ferrari 512 (or the Lambo Countach) are the best I've built, just so clever..

This year was great for interesting builds. The aforementioned Ferrari 512 and Lambo Countach are wonderful, and so too is the Aston Martin Valkyrie - I know you wanted to restrict it to single car sets, but it deserves a shout for having such a completely wild build that's unlike any other SC car. The DB5 is also worth a look.
