I’m getting my Lego display setup and want to have the lego carousel, Ferris wheel and roller coaster run off  power motors but instead of the battery box i want the power to come from being plugged into the wall.  What’s the easiest/cheapest way to do this?

ultimately it will be on a switch that I can turn on/off to turn the entire display on.

Yes, you need a 9V DC wall transformer.  Just remove the connector and replace with a Lego one.  As far as a switch, you can get several different types, recommend one like in a lamp cord, few dollars at a home improvement store.
