Two years ago, my LUG (Utah LUG) did a display at the Salt Lake ComicCon. At the last minute, I threw together a little (only 2 baseplates) miniland version of the event. ll the cosplayers liked seeing the miniland versions of themselves. The following year, I expanded it to 18 baseplates, with about 100 figures and created my own scavenger hunt, where I tried to get pictures of as many cosplayers and their counterparts as I could. Recently, after playing the Lego LotR and Marvel games, I've been inspired to create more figures and am working to expand it to 36 baseplates. You can see some of the more recent (and some of the old) figures here.

I'd like to hear suggestions (and maybe design suggestions) for some more figures.

I wasn't sure about starting a new thread, so I hope it's okay to bump this one.

Does anyone know where I would find a starting guide to building miniland figures?

The Unofficial LEGO builder's guide is a good start. There's a basic model in there. You can also Google Miniland USA and reverse engineer some of the stuff you see at Legoland parks.

They're not super-complicated, but I'm a big fan of them - it's hard to capture in that scale, something recognizable.
