Which set(s)?

I'm planning on building an off-road truck or Jeep, but I have no idea where to start.

Note that I don't have any Technic sets, and want to start finding some soon.

So where should I start? I have 3 choices right now.

1. Lego 42029 Customized Truck & 42005 Monster Truck
   
2. Lego 42009 Mobile Crane MKII
   
3. Lego 9398 4x4 Crawler
   

Any suggestions?

Note: I can always build a custom differential if I have to.

1 and 3 would be your best bet ... unless you want to get older (more expensive) sets such as 8466 4×4 Off-Roader and 8297 Off-Roader off eBay.

The only reason I mentioned the Mobile Crane is because of the tires.

Agreed, those are very good tires and they're relatively 'rigid' radially i.e., they can support higher loads, as compared to all other 'balloon'-type of tires.

get the crawler, its oldest has two L and a servo + controls.

For an offroad truck i would say go for the crawler. It has RC functions, has big tires ...
