I don't think LEGO would do a set of a bar. But the Kwik-E-Mart is probably a possibility.

Fox once owned the copyright on the original movie itself, but never more than that; all the merchandising rights, sequels, ownership of the characters, name, etc. have always belonged to Lucasfilm.
