I would have put it in the Licensed forum since it's a licensed theme set.
Anyway, I think zombies are the obvious answer, I also saw a MOC where a person got slimed from the ghostbusters ghost, also I think Seigrfire used the standing plates as lilly pads.
I still haent opened my 3 sets yet so I haven't had a chance to play with them much.

They could be used in a MOC where all life was frozen in place, and they became one with the vegetation. It's a longshot, but you can put that as #101.
I liked my set, but I'd gotten really excited about it by the preview pics, and didn't enjoy it as much as I expected to.

Things to do with them...
You could swap out the hands on Killer Croc to finally make him right, and you'd be keeping them in the Licensed family at the same time.
You could also use them as thorns on a vine, though I'm not a huge fan of minifig body parts being used that way.
Oh, or you could use them with a plain green torso to create a solid green minifig for your monochrome minifig collection. You don't have a monochrome minifig collection? Weirdo...
Last but not least, you could send me a pair to replace the ones I stole from Green Goblin to make my solid green minifig.
It's funny, actually, outside of one SPIII set, green hands have only appeared in Licensed sets: Toy Story, Spiderman and Star Wars have all had a green handed character (yes, there are 2 variations of Green Goblin and 2 different army men, but you get what I mean).

But I guess you wold like to keep helmets on your figs...
I agree on what they said before: you can use the hands as vegetable, even try to make a new technique for grass...
I hope you will show us what you find !
